Black Beans and Rice [CHEAP & SIMPLE]

Simple, cheap and healthy one pot recipe for black beans, rice and veggies.

I’m currently living abroad in Chiang Mai, Thailand, and I’ve given myself a strict budget to stick to.

Because they’re imported, canned beans are really expensive out here. Well, maybe not expensive, but more than double the cost of what it is back in England. So I’ve been buying bags of dried beans, because they’re cheap.

Without access to my treasured collection of herbs, spices and ingredients in my kitchen back home, I’ve had to get creative!

This means, that I’m keeping my recipes super simple, and making the most of minimal ingredients.

So, my new recipe for rice and beans is really simple and requires only 5 basic ingredients (more if you like your food spicy like me).

Not only is it easy and cheap, it’s healthy too!

It’s rich in protein and contains no oils.

I just used tomatoes and sweetcorn in my recipe, but you can pack yours with veggies if you wish – carrots, courgette, peppers, celery, leek… whatever you like or have available!

Prep time: 5 minutes
Cooking time: 1 hour 30 minutes
Total Time: 1 hour 35 minutes
Serves: 4

Ingredients

  • 1 cup dried black beans
  • 1 mushroom/veggie stock cube
  • 4 cups water
  • 1/2 tsp chilli flakes (optional)
  • 2 tbsp sriracha (optional)
  • 1/2 tsp cumin (optional)
  • 1 tsp tabasco (optional)
  • 2 cups chopped cherry tomatoes (approx 20)
  • 1 cup uncooked rice
  • 1 can sweetcorn (285g drained)
  • salt, to taste
  • pepper, to taste

Method

  1. Rinse your dried black beans to get rid of any dust. Pick out any funky ones that don’t look right.
  2. Pop your dried black beans, water and stock cube in your large saucepan and bring to the boil. Add the optional ingredients if you wish. Once boiling, turn the heat down to low and let simmer for 1 hour, with a lid on.
  3. Rinse your rice and add to your saucepan, along with your tomatoes, or vegetables of choice. If you are using sweetcorn, add this just ten minutes before serving as they don’t take as long to cook.
  4. Every ten minutes or so, just give the pot a stir. Add more water if your beans an rice look too dry.
  5. Once the beans and rice have soaked up all the water, you’re ready!
  6. ENJOY!!
