Marmalade Chicken Stir-Fry – Vegan Recipe!

Deliciously tangy ‘chicken’ and mixed vegetable stir fry, served with basmati rice and quinoa.

An amazingly simple recipe for such a tasty meal! You only need 8 key ingredients (plus whatever veggies you want to add), and 15 minutes spare to whip this one up.

I stumbled across M&S’s ‘Veggie Chunks’ from their new veggie range, whilst picking up some canape platters for work, and even though I had 2 big bags of food to carry back, I just had to get them for myself!! I couldn’t wait to try them so I rummaged through the fridge when I got home to see what ingredients I had to make something with them. I had garlic and onions (of course), ginger, marmalade, soy sauce, cashews, veggies and some rice – SORTED.

The veggie chunks were delicious!!! For those of you who are a fan of meat substitutes – you’d love them (those of you who don’t probably won’t). They look and taste just like chicken, and the texture is really similar too! I personally didn’t go vegan because I didn’t like the taste of meat, I just don’t like the cruelty that comes with it – so I’m all about the substitutes!

I get a lot of my food inspiration from my dad as he would cook meals from scratch most nights when I was growing up. I think that’s where I get my ‘throw whatever ingredients I have available together and wish for the best‘ attitude. He does that and it always seems to work out for him! We have always served his rice dishes with slices of cucumber on the side, so I’m carrying on the tradition. And as a family we love spice, so we always add some sort of chili sauce on the side. To us there’s a perfect chili sauce for every meal, and to me sriracha works for this one! πŸ™‚

Prep time: 5 minutes

Cooking time: 10 minutes

Total time: 15 minutes

Serves: 4


  • 1 packet M&S Veggie Chunks
  • 3 tbsp ground nut oil
  • 1 onion, diced
  • 4 garlic cloves, sliced
  • 1 tsp ginger, minced
  • 1 pepper, sliced
  • 1 carrot, sliced
  • 1 broccoli
  • 1 big handful mushrooms, sliced
  • 1/2 cup raw cashews
  • 1/2 tsp hot chili powder
  • 6 tbsp soy sauce
  • 3 tbsp orange marmalade
  • 1/4 cup water

Serve with basmati rice and cucumber.


  1. Fry the onion, garlic and ginger in oil for 2 minutes while you chop your other veggies.
  2. Add the veggie chunks, cashews, peppers, carrots and broccoli and fry on a medium/high heat for 3 minutes.
  3. Add the mushrooms, soy sauce, marmalade, chili powder and water and toss it all together over a high heat for 5 minutes.
  4. Serve with rice and sliced cucumber.
  5. If you like a bit of spice, drizzle some sriracha sauce on top (or your favourite chili sauce of course), and ENJOY!!!
