Paprika and Garlic Roasted Vegetable Medley – Vegan Recipe!

Paprika and garlic seasoned roasted vegetables with chickpeas and hummus!

After a week of eating a whole lot of junk food (living the dream) I just fancied something healthy yet tasty for dinner. I didn’t really feel like a salad with it being absolutely FREEZING at the moment, I needed something warm and hearty – so I decided on roasted veg, chickpeas and hummus ❀

This is a super simple recipe, with everything (but the hummus of course) cooking on one baking tray for the same amount of time.

It’s a great way to get your 5 a day, as it’s tasty and healthy!

I used broccoli, peppers, onions, courgettes and chickpeas in mine, but of course you can bake whichever veggies you like πŸ™‚ let me know what you create for future meal inspiration!

Prep time: 5 minutes

Cooking time: 30 minutes

Total time: 35 minutes

Serves: 2

Ingredients

  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp paprika
  • 1/2 tsp garlic granules
  • 1 courgette
  • 2 peppers
  • 1 can chickpeas (400g tin)
  • 1 broccoli
  • 1 red onion
  • 1 big scoop hummus

Instructions

  1. Pre-heat the oven to 200g.
  2. Mix all of the ingredients above together (apart from the hummus) and bake for 25 minutes, turning half way.
  3. Serve with a big scoop of hummus, and that is pretty much it.
  4. ENJOY!!!!
