Berry Fluffy Pancakes – Vegan Recipe!

Anywayyy, I know I’m a bit late to the party with pancake day over, but it’s never not a good time for pancakes?! And I bet you remembered how tasty they are, and want some more?! So these are super simple, super fluffy, super tasty pancakes – for real.

You can top them off with whatever you like – chocolate, peanut butter, ice cream etc. etc. Get creative! I had a whole bunch of berries in the fridge so they went on top of my pancakes, which were drowned in agave syrup – simple yet DELICIOUS.

These are obviously the best fresh out the pan, but you can keep them for a few days in a airtight container, or freeze the leftovers (if you can resist them!) Whenever you fancy one or two or five, you can just pop them in the toaster, or the microwave πŸ™‚


Prep time: 5 minutes

Cooking time: 5 minutes

Total time: 10 minutes!

Serves: aroundΒ  8-10 pancakes, depending on the size of course

Ingredients

  • 2 cups plain flour
  • 2 tbsp baking powder
  • 3 tbsp sugar
  • 1 tsp salt
  • 1 tsp vanilla essence
  • 1 1/2 cups plant-milk, I used almond milk

Instructions

  1. Mix the flour, baking powder, sugar and salt together and gradually add the milk, whisking it in. Finally mix in the vanilla essence.
  2. Heat a lightly oiled non-stick frying pan over medium-high heat. Scoop spoonfuls of your batter into the pan, and cook until bubbles form in the middle and the edges are dry. Flip, and cook until browned on the other side. Repeat with remaining batter.
  3. Top them with whatever you like and ENJOY!!!!
