Big Mexican Brunch – Vegan Recipe!

‘Cheese’ filled tortillas, ‘chorizo’ sausages, scrambled tofu, Mexican beans, fried peppers and onions, AAAAND guac!

Full English breakfast with a Mexican twist!

This was inspired by the ‘Huevos Rancheros’ breakfast from The Breakfast Club. My boyfriend ordered it and I can’t lie – I was JEALOUS!!! But it wasn’t vegan, so I ate my meal with huge food envy. The next weekend I put this one together and it was so satisfying! I was absolutely stuffed by the end of it and needed to go back to bed, but it really hit the spot ❤

Cheese Tortillas – swapped the cheese for Violife Original Flavour Slices. They’re my favourite cheddar style slices.

Chorizo Sausages – I swapped these out for Linda McCartney’s Vegetarian Chorizo & Red Pepper Sausages. Delicious.

Eggs – Swapped out for scrambled tofu!! What an absolute godsend scrambled tofu is. Eggs was one of the things that I knew I would REALLY miss when I turned vegan, but then I discovered scrambled tofu. It’s so much better than I ever would of imagined, and it fills that egg shaped hole in my heart.

RECIPE BELOW

Refried Beans – didn’t need to swap these out but I went for the shortcut option and bought a tin of Heinz Mexican Beanz – simplez.
