Homemade Fragrant Basil Pesto!

This is a SUPER simple and quick recipe for homemade pesto using only 7 ingredients and 5 minutes of your time.

I’ve found that vegan red pesto is always way easier to find than green pesto as it always seems to contain milk! I’ve even found that quite often it won’t even be vegetarian as parmesan isn’t always vegetarian. I though it was about time I made my own. As it’s so easy, there isn’t really an excuse.

I’ve been getting serious pasta cravings recently, but I’ve also been eating a lot of rubbish so I compromised and made Pesto Courgetti Spaghetti (click here for the recipe), but you can use your pesto on so many different things – pizzas, bruschetta, sandwiches, salads etc. etc.

If you want to make your pesto healthier, then you can swap all or part of the olive oil, for vegetable stock πŸ™‚

I used a food processor to make mine, but you can also use a blender, or even a mortar and pestle.

Cooking time: 5 minutes

Serves: 8 (ish)

Ingredients

  • 2 cups fresh basil
  • 1 cup pine nuts
  • 1/3 cup high quality olive oil
  • 3 cloves garlic
  • 1/3 cup nutritional yeast
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Blend all the ingredients together, add more salt and pepper to taste (if you wish).
  2. ENJOY!!!
