Half Baked Bites – Vegan Recipe!

Indulgent fudgy chocolate chip cookie dough and brownie bites!

Can’t decide between brownies and cookies? Why do you have to?! Have both. Together.

An indulgent treat inspired by Ben & Jerry’s Half Baked ice cream! Half cookie dough half brownie – tasty!

Soft cookie dough topped with fudgy chocolate brownie, perfect for those sweet tooth cravings.

My recipe makes quite a large batch so they make a lovely gift or treat to impress your friends and family. You can keep them in an airtight container for a few days, OR pop your leftovers in the freezer as they freeze well too. Just leave them out for an hour or so to thaw through.

I used Sainsbury’s own dark chocolate chips which are delicious, I might of napped a few of them before they went into my cookie dough…..

Prep time: 30 minutes

Cooking time: 30 minutes

Total time: 60 minutes

Serves: 24

Ingredients 

Cookie Layer

  • 1/2 cup caster sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegan butter / margarine
  • 1 flax egg* (1 tbsp milled flax seeds + 3 tbsp warm water)
  • 1 tsp vanilla extract
  • 1 1/4 cups all purpose flour
  • 1/2 tsp baking powder
  • 1/3 salt
  • 200g vegan chocolate chips

Brownie Layer

  • 1/2 cup plant milk
  • 1/3 cup vegetable oil
  • 1/2 tsp vanilla extract
  • 1 cup all purpose flour
  • 3/4 cup cocoa powder
  • 1/3 tsp salt
  • 1/2 tsp baking powder
  • 1/2 cup brown sugar
  • 1/4 cup casting sugar
  • 100g white chocolate chips

Instructions 

Cookie Layer

  1. Whisk together caster sugar, brown sugar, salt and butter until combined with no lumps.
  2. Add the flax egg* and vanilla and whisk until combined.
  3. Sift in the flour and baking soda, and fold the mixture in with a spatula, don’t over-mix it as it will toughen the mixture.
  4. Fold the chocolate chips in gently and chill the mixture for at least 30 minutes.
  5. Line your baking tray with baking paper and evenly spread the cookie dough mixture on your tray. Put the tray in the fridge and pre-heat your oven to 180ºC while you make your brownie mixture.

Brownie Layer & Finishing

  1. Whisk the plant milk, vegetable oil and vanilla extract together.
  2. Add your flour, cocoa powder, salt, baking powder, brown sugar and white sugar in and whisk together until combined.
  3. Mix your chopped chocolate in.
  4. Spread your brownie mixture on top of your cookie dough evenly.
  5. Bake in the middle of the oven for 25-30 minutes (depending on thickness/baking tray).
  6. Cool for at least an hour at room temperature, or 30 minutes in the fridge until they feel firmer.
  7. ENJOY!!!!!

*Flax Egg

  1. Grind your flax seeds, if they haven’t already been milled (quite often they are already ground).
  2. Add 1 tbsp milled flax seeds to a small container – measure the flax seeds after grinding.
  3. Add 3 tbsp of warm water and mix well for 1 minute.
  4. Leave for 10 minutes until the mixture thickens and becomes sticky.
