Big Mexican Brunch

‘Cheese’ filled tortillas, ‘chorizo’ sausages, scrambled tofu, Mexican beans, fried peppers and onions, AAAAND guac!

Full English breakfast with a Mexican twist!

This was inspired by the ‘Huevos Rancheros’ breakfast from The Breakfast Club. My boyfriend ordered it and I can’t lie – I was JEALOUS!!! But it wasn’t vegan, so I ate my meal with huge food envy. The next weekend I put this one together and it was so satisfying! I was absolutely stuffed by the end of it and needed to go back to bed, but it really hit the spot <3


Cheese Tortillas – swapped the cheese for Violife Original Flavour Slices. They’re my favourite cheddar style slices.



Chorizo Sausages – I swapped these out for Linda McCartney’s Vegetarian Chorizo & Red Pepper Sausages. Delicious.

Eggs – Swapped out for scrambled tofu!! What an absolute godsend scrambled tofu is. Eggs was one of the things that I knew I would REALLY miss when I turned vegan, but then I discovered scrambled tofu. It’s so much better than I ever would of imagined, and it fills that egg shaped hole in my heart.


Refried Beans – didn’t need to swap these out but I went for the shortcut option and bought a tin of Heinz Mexican Beanz – simplez.

Cooking time: 15 minutes

Serves: 2

Cheese Tortillas


  • 2 tortillas
  • 2 tsp olive oil
  • 4 slices vegan cheese


  1. Drizzle some olive oil over the tortillas.
  2. Tear bits of the cheese slices and cover half of the tortillas.
  3. Fold them over and put them under the grill for 5-10 minutes, turning them half way.

Chorizo Sausages

  1. Fry them in a little olive oil for approximately 10 minutes until browned all around the edges.

Scrambled Tofu


  • 150g firm tofu
  • 1 tbsp light soy sauce
  • 2 tbsp butter
  • 1 tbsp nutritional yeast
  • sprinkle salt
  • pepper, to taste


  1. Crumble the firm tofu in a bowl and mix in all other ingredients apart from the butter.
  2. Melt the butter in your pan and add the tofu when it starts sizzling.
  3. Fry it in the butter for about 5 minutes until it’s cooked right through and has just started to brown.

Mexican Beans

  1. Cook them in a hob over a medium heat until they are hot right through.

Fried Peppers & Red Onions


  • 1 tsp olive oil
  • 1 onion
  • 1 pepper
  • salt, to taste
  • pepper, to taste


  1. Fry the onions and peppers together in a little olive oil over a medium heat until they start to brown.

The Best Guacamole!


  • 2 ripe avocados
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1/4 pepper, diced
  • 1/4 onion, diced
  • 1/4 red chili, finely chopped
  • sprinkle fresh coriander
  • salt, to taste
  • pepper, to taste


  1. Smash all of the ingredients together.
